Ratte potato

Ratte potatoes are a particular type of yellow-fleshed potato, elongated in shape, and with a flavour similar to that of chestnuts.
The skin of these potatoes is very thin and delicate. It can be removed very easily by rubbing it with your fingers, but you can also eat it.
Like common potatoes, they can be eaten boiled or baked. They handle cooking very well and can be used to prepare excellent gnocchi or mashed potatoes.
